Chocolate (Applesauce) Cupcakes
For people with food restrictions, each day can be a challenge in creating a menu with variety while staying within specific boundaries. I watched my boss go through the process after being diagnosed with Diabetes almost two years ago. So when it came to celebrating his birthday in the office I wanted to find an alternative to super sugary, high-carb sweets, that still taste great.
Meet Chocolate Applesauce Cupcakes!
Clocking in at only 20 carbs (sans frosting).
What we used:
- Butter (1 cup)
- Sugar (3/4 cup)
- Eggs (2)
- Cocoa Powder (1/2 cup)
- Unsweetened Applesauce (1 1/2 cup)
- Flour (1 3/4 cup)
- Baking Powder (1 tsp)
- Baking Soda (1 tsp)
- Salt (1/2 tsp)
How we did it:
- Preheat oven to 350 degrees F.
- In a large mixing bowl, cream butter and sugar with an electric beater for 1 to 2 minutes.
- Add eggs and the cocoa powder and mix until smooth, then fold in the applesauce.
- In a separate mixing bowl, combine the flour, baking powder, baking soda, and the salt.
- Stir dry mix into the egg mixture gently. Be careful to not over-mix.
- Next, spoon the batter into the prepared muffin tins, filling each one 3/4 of way full.
- Bake for 22 to 25 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
- Cool briefly before removing the cupcakes from the pan, and love err enjoy!
